Kaiyo Mizunara Oak Japanese Whisky
Kaiyo whiskey is matured in the finest Japanese Mizunara oak casks. These casks are handmade due to Mizunara oak’s delicate wood grain. They are among the rarest casks in the world and are considered the finest in which to mature whisky.
Kaiyo Japanese Whisky has a delicate nose of vanilla, ripe dried fruit and hints of cherry, with a long lingering finish.
For starters: Kaiyo is double-distilled, 100% malt whisky, but it’s not single malt. (“I don’t even think they really teaspoon it, but that’s what they say on the paperwork,” says Karlovitch.) Teaspooning is done to prevent the purchaser of a barrel from claiming it is 100% from a certain source — and thus unable to put said source’s name on their label — and it’s a practice that isn’t unique to Japan. That said, these whiskies are purchased as white spirits directly from the distiller and are then aged to maturity by Karlovitch and Kaiyo.
