- A classic expression first released in 1993, The Balvenie 12yo DoubleWood is matured for at least 12 years in American oak ex-bourbon barrels and hogsheads before being moved to Spanish oak, ex-Oloroso sherry casks for an additional several months of finishing. The whisky is then transferred to large oak vessels called “tuns” for a few months to marry and integrate the flavours before bottling. Bottled at 43%. (Bottle size 750ml)
Nose: Sweet fruit and Oloroso sherry notes, layered with honey and vanilla.
Palate: Smooth and mellow with beautifully combined flavours – nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry.
Finish: Long and warming.
- In early 1892 work began to convert an 18th century mansion – Balvenie New House – into a distillery. The Balvenie New House had been purchased by William Grant in March of the same year. Uninhabitable and austere, it was a building of some grandeur with the coat of arms of the Duffs carved into the pediment of its second story.William Grant was a clever businessman and saw this as another venture. He had the land, the rights to use the water and a strong business compulsion to extend his options. The basement was to become a bonded store for maturing whisky, the first storey a malt floor, whilst the upper two floors were to be used as grain lofts. The building took fifteen months to complete and on 1st May 1893, the first distillation took place at The Balvenie Distillery.
The Balvenie distillery has now been owned and managed by an independent family for over five generations. Nowhere else will you find a distillery that still grows its own barley, still malts in its own traditional floor maltings and still employs coopers to tend the casks and a coppersmith to maintain the stills. Successive generations of skill on the malting floor, in the tun room and the still house, in the cooperage and the warehouses have preserved the consistency and remarkably high quality of The Balvenie down the years.
It’s been over a decade since we’ve revisited the Balvenie range. From the 12 Year Old, right up to the venerable 30 year old expression, the house style emerges as one of the lightest and most delicate to be found from Speyside with almost no peat evident. Tasting note: Pale gold appearance. Quite lifted on the nose with vanilla, dilute honey and dried fruits featuring. A featherweight entry leads into a medium weight dram with moderate flavours of dried fruit and a warm, slightly raw mouthfeel. Aftertaste of dried grass and drying oak. The warm spicy spirit lingers. Pleasant, though rather one dimensional. 40% Alc./Vol.
The Balvenie 12 Double Wood gets its name from the barreling process it goes through before reaching the bottle. After being distilled the new make is put into ex-bourbon casks, as is largely the norm in Scotland, and after about 12 years of aging / maturing in the bourbon barrels the spirit is dumped into first fill sherry casks and left to age for about 2 more months.
This short sherry finishing doesn’t really lend much of that sherry flavor to this single malt, but more lends a subtle sweetness and rounds the whole thing out; helping to further remove any rough edges it might have had coming out of the ex-bourbon barrels. Regardless of the time spent finishing in sherry casks, the end result of that DoubleWood process is a fine tasting whisky.
Slightly red caramel
Complex tropical and orchard fruit opens up. It leans a bit heavy on the tropical side with honey, vanilla, and a nice dessert sweetness giving support. A few dashes of malt and sweet cocoa add more dimension and excitement.
Muddled tropical and orchard fruit laced with caramel and honey dance across the tongue followed by light notes of wood, malt, dark sweetness, red licorice and a hint of melon. The flavor takes on a noticeably darker character.
Malt and wood and fruit and char and something intriguing that I can’t quite pinpoint pleasantly linger long after the dram is gone.
BALANCE, BODY & FEEL
There is a nice harmony to this whisky and it’s carried on a medium body and a smooth oily texture.
The Balvenie 12 DoubleWood is one of my favorite kicking-it-around-the-house sipping whiskies. It has enough complexity to keep it interesting and fun, but light enough to fit into almost any occasion. That warm fruit and honey nose that slips into darkly sweet and fruit palate and fades out in equal parts sweet and rustic puts a smile on my face every time. It also pairs well with food and makes great cocktails if you’re so inclined. It’s just an all around great whisky.
